Rye Flour and Apple Sauce Waffle Recipe
I love waffles and pancakes and I thought that when I started my "reclaim my health and weightloss journey" that I would have to give them up. I was wrong!
What I needed to give up was my old notion on what made a good waffle. When I first tried this recipe I had my doubts, but now I feel I could never go back to the bland, old, white flour, pastey tasting waffle. These have a divine rich and satifying flavour.
This recipe actually fits into the Metabolic Balance Eating Plan, that I and my clients follow. Being healthy has never tasted soooo good.
Ingredients listed per serving. (Just multiply by the number of servings you wish to make)
- One egg
- Light rye flour ~ 1/4 cup
- Apple sauce ~ 1/3
- Water ~ up to 1 TBS
- Cinnamon to taste (add to batter or use as topping)
Coat waffle iron with a healthy oil such as ghee (clarified butter), coconut oil or olive oil. Butter can be used. Heat waffle iron while thoroughly mixing all the ingredients. Add water as per needed to create a smooth texture. Pour appropriate amount based on your waffle iron and cook until golden brown. When I created 2 servings it made three full heart/flower waffles. Make extra and freeze.
Serve with your favourite accompaniments: yogurt, other fruit, butter and syrup, side of eggs.
No waffle iron? No worries. Just cook up as little pancakes.
Variartions: substitute the apple sauce for grated apple or mashed other fruit.
